Lunch Salads

I loved my salad for lunch so much a few weeks ago that I have decided to make it a staple work meal, at least once a week! I forgot to take a pict for you the other day. Its amazing because it doesn't get soggy at all if you layer it the right way, and the only thing I need to do in the morning is cut the avocado in half so Greg and I could each add it to our salads later in the day. 

In the bottom, I put balsamic vinaigrette topped with the sliced cucumbers, tomatoes (added a little salt and pepper there), mozzarella, thinly sliced red onion, rotisserie chicken from dinner the night before, mixed greens, spinach, herb and garlic pita chips. When you are ready to eat, just shake it up and add in your avocado! Enjoy a healthy prepared lunch at work :)
